Today let's talk about our Oolong Tea. This is a Formosa Oolong out of Taiwan and it's very important when talking about an Oolong tea to understand what it is. When we discuss tea type you have a White tea which is unprocessed or unoxidized all the way to a fully oxidized Black tea. An Oolong is going to fall right in between a Green tea and a Black tea on the oxidation schedule. To make a cup first we'll take one teaspoon of Oolong tea per eight ounces of water. If you're using a tea bag that will suffice as well. We will take 185 degree water and pour it over our tea leaves after five minutes we'll pour this over our hand mesh strainer. If you're using a tea bag or tea ball now would be the time to remove that. Taking a sip it's dark, it's nutty and has a faint sweetness to it. It's not quite a Black tea, but definitely a lot stronger than a Green tea. You will find a lot of Oolong teas at Chinese restaurants when you go out. And that's our Oolong tea.
